Lime Chicken Salad

Well I don't know about you, but this heat wave has made me crave summery foods.  This recipe is one of our new summer favorites and comes from Aunt Laurie's kitchen in Bend, Oregon.  If you are looking for a new dish to try, we seriously suggest this one.  It's also a good way to get those who don't enjoy vegetables to eat them.     


Lime Chicken Salad

Brown three chicken breasts in oil with salt and pepper. Cut chicken into strips. Mix together 1-2 teaspoons grated lime peel, 1/2 cup lime juice, and 2-3 tablespoons sugar. Put mixture over chicken until carmelized.

Top salad with chicken, tomatoes, corn, avocado, red pepper, beans, mango, and feta cheese. Add tostitos for a little bit of crunch. Drizzle honey lime dressing over salad (recipe below) and enjoy!

Honey Lime Dressing

1/4 cup fresh lime juice
1/4 cup olive oil
2 tablespoons honey
2 tablespoons chopped cilantro
1 garlic clove, minced
1 teaspoon jalapeno pepper
dash of salt and pepper
