I promise this isn't becoming a cooking blog, despite the last three posts. Apparently food has been on my mind or at least in our stomachs lately. :) Here's another easy, delicious dinner recipe if you're looking for something new to try. No pictures this time, but take our word for it!
Tortellini Basil Soup
32 ounces fat-free, less-sodium chicken broth
9 ounces fresh cheese tortellini
15.5 can cannellini or great northern beans
1 can diced tomatoes or fresh tomatoes chopped
1/2 cup thinly sliced fresh basil
2 tablespoons balsamic vinegar
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
Optional: top with fresh parmesan cheese
Bring broth to a boil in large pot. Add tortellini and cook 6 minutes or until tender. Stir in beans and tomatoes. Reduce heat and simmer 3-4 minutes or until thoroughly heated. Remove from heat. Stir in basil, balsamic vinegar, salt and pepper. Ladle soup into individual bowls. Yields 6 servings.
